The first word I ever said was "cheese." I take the stuff very seriously.
Unfortunately, it seems Chileans don't. Sure, there is some decent stuff out there, but the majority of "fine" cheeses are either a good mantecoso, a cheese made from cow milk, or goat cheese. Both are great, but still...
On the search to get my fix, I ran across Barbillon Gourmet, a great little place in Vitacura specializing in all things French. Alas, I found a camembert that had creaminess and flavor, a brie that blew my mind. (Again, I take cheese very seriously.)
Sure, you can pay way too much for these in the regular supermarkets, but I assure you, if you know what they should really taste like, Chile's versions just don't cut it--it's not worth the calories. Barbillon does cut it though, with delectable cheeses.
The only problem, is that everything is imported directly from France, so you're not always guaranteed a quick fix. However, the staff is extremely friendly, and don't mind your calling to check in; it may be that if you call incessantly enough, they will be so kind as to take your number and call you when their inventory is freshly stocked.
Aside from amazing cheeses, truly gourmet, they also sell fine French wines, sauces and other French delicacies. I would highly recommend you try one of several of their mustards. Price-wise, for the quality and its "top" location, things seem quite fair. One box of fine camembert costs between $5,500 - $7,500 CLP; it's certainly not cheap, but hey, for cheese...
